Chai-Spiced Nectarine Overnight Oats

Wet Ingredients
For 2-4 servings
½ cup- Hello! I'm Ugly Diced Nectarines
1 ¼ cup- Milk
1 ½ tablespoon- Honey
1 teaspoon- Chai Spice Mix
Oats Ingredients
½ cup- Rolled oats
1 tablespoon- Chia seeds
½ cup- Plain yogurt, Greek, or any non-dairy option
1 pinch- Kosher salt
Chai Spice Mix Ingredients
1 ½ tablespoon- Cinnamon
2 teaspoon- Cardamom
2 teaspoon- Ginger
½ teaspoon- Clove
½ teaspoon- Nutmeg

Step One:
1. Freshly grind the spices for more intensity, or use ground spices.
2. Combine spices in a small bowl. Store in an airtight container.
Step Two:
1. In a small sauce pan, combine milk, chai spice mix, and Ugly diced nectarines.
2. On medium-low heat, gently heat the ingredients so the nectarines soften, approximately 2 minutes. Do not boil.
3. Once the mixture comes to a simmer, turn it off. Whisk in the honey until combined.
4. Cover and let sit for 10 minutes.
Step Three:
1. In a mixing bowl, gently combine the oats, chia seeds, yogurt, salt, and steeped milk mixture.
2. Once it is fully combined, place the mixture into a container and cover.
3. Place in the refrigerator for at least 8 hours.
4. To serve, spoon into your favorite small cereal bowl and top with fruit preserves, Ugly diced nectarines, nuts, coconut, and/or fresh fruit.

Dina Altieri is a chef and educator with over 35 years in the hospitality industry. She has enjoyed a diverse range of experiences in her career—cooking in restaurants and catering operations, teaching and designing post-secondary and workforce development-based education programs, leading culinary and faculty teams and operating social enterprises.
Dina is the Director of Education and Training at Catalyst Kitchens. She works with culinary program teams from over 100 nonprofits to strengthen their job training programs and support achievement of learning goals, student success, and graduate placement through virtual and in-person curriculum accelerators and training events
To drive change in the hospitality industry, Dina advocates for improved workplace culture and greater awareness of mental health and wellness as an Ambassador for The Burnt Chef Project and Culinary Hospitality Outreach Wellness (CHOW). Dina is a member of Les Dames d’Escoffier International and the American Academy of Chefs.
