California Summer Salad
Salad ingredients
1/3 cup - Your Choice Hello! I'm Ugly Diced Dried Fruit
1 small package baby spinach
¼ cup - Crumbled Cacon
1 Small Avocado, Sliced
Red Onion - Thinly Sliced to Taste
Dressing ingredients
2 Tablespoons - Poppyseed Dressing
2 Tablespoons - Seasoned Rice Vinegar
1. Combine salad ingredients in bowl and lightly salt.
2. Mix dressing ingredients together in a separate bowl and pour over salad.
3. Enjoy!
Seedy Apricot Granola
1 Cup - Hello! I'm Ugly Diced Apricots
4 cups - Old Fashioned Oats
1 cup - Peanuts
1 cup - Sliced or Slivered Almonds
1 cup - Chia Seeds
1 cup - Flax Seeds
1 cup - Sesame Seeds
1 cup - Sunflower Seeds
½ cup - Maple Syrup
½ cup - Honey
½ cup - Agave Syrup
¾ cup - Olive Oil
1 cup -Chopped Crystalized Ginger
1. Preheat oven to 325.
2. Combine everything but the apricots and ginger.
3. Divide in half and spread onto two cookie sheets or jelly roll pans.
4. Bake 15 minutes.
5. Stir. Bake another 15 minutes.
6. Remove from oven and add apricots and ginger.
7. Stir well. Let cool for 5-10 minutes,
8. Break up into crumbles.
9. Cool completely.
10. Store in an airtight container in the refrigerator.
Nectarine Power Bites
Bites Ingredients
1 ½ Cup - Hello! I'm Ugly Diced Nectarines
1 cup - Slivered Almonds
1 cup - Almond Flour
2 cup - Flaked Coconut
2/3 cup - Sweetened Condensed Milk
Coating
1 cup - Flaked Coconut
½ cup - Powdered Sugar
1. Mix all ingredients thoroughly.
2. Put coconut and powdered sugar for coating the bites into opposite sides of a pie plate.
3. Roll the mixture into 1-inch balls.
4. Coat with coconut and then powdered sugar.
5. Store in the refrigerator.
Apricot Cashew Fudge
1 Cup - Hello! I'm Ugly Diced Apricots
24 oz White Chocolate Chips
¾ cup - Maple Syrup
1/2 cup - Whole Cashews
Pinch of Salt
1. Line an 8-inch square glass pan with parchment paper.
2. Melt chips in microwave. Make sure to do this slowly so the chips don’t burn. Run microwave at full power for about 30 seconds. Stir repeatedly. Repeat these steps until they’re completely liquid.
3. Stir in maple syrup. It will cool the chips immediately so you will again need to Stir repeatedly.
4. Stir in cashews and apricots.
5. Press into prepared pan.
6. Chill until completely firm, 1-3 hours.
7. Lift parchment paper out of pan and onto a cutting board.
8. Cut fudge into one-inch squares.
Chocolate Peach Scones
1 Cup - Hello! I'm Ugly Diced Peaches
½ cup - Butter
2 - eggs
¾ cup - Canned Milk
2 ½ cup - Flour
2 tablespoon - Granulated Sugar
1 tablespoon - Baking Powder
¼ teaspoon - Salt
1 ½ cup - Semi-Sweet Chocolate Chips
1. Preheat oven to 350.
2. Mix flour, sugar, baking powder and salt.
3. Cut in butter. In a separate bowl, mix together eggs and milk.
4. Add liquid to dry ingredients with a fork.
5. Stir in peaches and chocolate chips.
6. Turn onto a floured board.
7. Form into a flat circle about 12 inches across.
8. Cut into 8-12 pie-shaped triangles.
9. Bake 20-25 minutes until lightly brown.
