Nectarine Chutney Meatballs

Meatball Ingredients

¼ cup- Hello! I'm Ugly Diced Nectarines

1lb- Ground Beef

1lb- Ground Pork

1- Jalapeno, small, diced

½- Red Onion, small diced

1 cup- Italian Bread Crumbs

¾ cup- Milk

1- Egg

Salt and Pepper to taste


Nectarine Chutney Ingredients

1 ½ cups- Hello! I'm Ugly Diced Nectarines

2- Jalapeno, small, diced

1 cup- Water

1 cup- Sugar

½ Cup- Red Wine Vinegar

1 teaspoon- Cinnamon

½ teaspoon- Cayenne

¼ cup- Brandy (optional)


Grits Ingredients

4 cups- Water

1 cup- Instant Grits

½ cup- Cream

1 ½ cups- Cheddar Cheese

1 teaspoon- Goat Cheese


For the meatballs

  1. mix all ingredients together

  2. Form into 2oz balls

  3. Bake at 350° for 20 minutes


For the grits

  1. Bring the water to a boil then add grits

  2. Stir occasionally until grits thicken

  3. Once thickened, add cream, cheddar and goat cheese

  4. Stir until fully incorporated


For the chutney

  1. Chop onion jalapeno and Hello! I'm Ugly Nectarines

  2. Add into pot with water and sugar, bring to a boil

  3. Add cinnamon and cayenne

  4. Cook until it starts to become syrupy for roughly 20 minutes
